We spoke to bartender Irene Benjamin about herself as a bartender and her favorite signature cocktail recipe.

“My name is Irene Benjamin and I work at the Zalama ACB in Be’er Sheva, Israel. I’ve been working behind the bar for 5 years now. I am 25 years old and in 2018 I won Bacardi Legacy, and represented Israel in the global finals that took place in Mexico city.”

Back to Basics cocktail by Irene Benjamin

Ingredients

2 oz Bacardi Carta Blanca

1 oz orange and wine syrup

3/4 oz freshly squeezed lime juice

1/3 oz Vermouth dry

1/2 oz Aquafaba (chickpea water) or egg white

2 dash bitters Angostura Aromatic

Orange peel for garnish

For the syrup

Cut 1 orange to cubes, add ½ a peel, mix with 300g of sugar and let it soak for 15 minutes. Cook with 11 fl oz of red wine (Merlot) for 10 minutes.

Preparation

Shake with ice. Double strain. Garnish with orange peel.
