From 21 November 2018 to 24 January 2019, the “Cognac Cocktail Connection” is back for a 6th edition. For the occasion, four evenings will be organised for the general public on the theme: “Cognac & Cocktails” with the participation of four major metropolitan establishments. On Thursday, January 10, we will meet you at the “Symbiosebar, quai des Chartrons in Bordeaux. A breathtaking view of the Garonne to enjoy cocktails made with Cognac.

After the Cancan in Bordeaux in 2017, Cognac Cocktail Connexion continues its “cocktail” investigations in the region. For the new edition, this city at the heart of Charente eau-de-vie remains the preferred destination. As ambassador for 2018, a renowned establishment on the city’s cocktail scene: the bar-restaurant “Symbiose”. Founded by 4 adventurers of liquids and solids – at the Simon and Lucas bar, at the Félix stove, not to mention Thomas the jack-of-all-trades – this landmark that makes the hearts of Bordeaux epicureans beat proudly blows its three candles in December. Based in the invigorating Chartrons district, Symbiose has already left its mark on the city

wine for its amazing cuisine and stunning cocktails. Artisans to the very end of their nails, the quartet has put their hands in the sludge to create a decor that reflects their image: simple and authentic. Behind a 19th century Comtoise clock, the band built its tavern for mixed drinks. A visit to the cabinet wall of curiosities packed with old nectars is a must before sitting at the equally rustic counter under dim lighting.

When it comes to cognac, we are facing real experts. 20 bottles lined up on the shelves, and creations that enhance the aromatic profile of this AOC. “In cocktails, I’m a big fan of Borderies for their incisive and floral character at the end of the mouth,” explains the passionate Simon Chollet. It reminds me of the whisky world in the north of Scotland, of which I am also a fan. Nowadays, the image of cognac is being modernised. The younger generation of bartenders is more focused on taste and typicity. “One of the cocktails chosen for the evening will thrill many taste buds: a long drink with a Borderies cognac, an infusion of cascara (coffee cherry), a Normandy aperitif, a green olive brine, and a local tonic.
