The agricole rum producer Rhum Clément welcomes Julien Thimon, who worked for 18 years with Peronet.

It is now Julien Thimon’s turn to supervise and ensure from conception to bottling of Rhum Clément rum from Martinique. This classic Martinique rum has been produced since the end of the 19th century.

Peronet said of Julien Thimon’s arrival: “I could not have asked for a better successor. Over the years, I have noticed an increase in his expertise. I won’t say that the pupil has surpassed the master, but I believe that today Julien has become almost a better nose than mine.

The two cellar masters worked together for 18 years. In this new position at Rhum Clément, Thimon will manage some 12,000 barrels in six aging cellars the house of the Habitation Clément brand.

The Martinique-based producer said Thimon’s appointment would involve only “very minor changes” in aging and blending, as there has been ample time to prepare for the transition.

For his part, Thimon said of his new position at the rum house. “I‘m a man of the field because, for me, the magic really happens in the cellars. To produce the best aged rum, to make experiments and new discoveries, you have to be as close as possible to the barrels, talk at length with the tasting committee and let the rum surprise you.

“It’s a new role that I welcome with all humility and continuity with my previous functions. Because yes, as Robert taught me, the role of the cellar master is also to ensure the transmission of his know-how. It is a role that I am very interested in and that I will continue to play in order to find and train our future talents.

Peronet added that after his departure from Rhum Clément, he would continue to act as a consultant to Thimon and the entire production team.
