It’s as easy as it sounds. Just make sure you use a vermouth you really like (I’m a fan of dark, robust and earthy Spaniards) and keep the bottle in the fridge.

My favorite drink, ready in five seconds, is a Spritz – sweet vermouth with added seltzer – that tastes like the best soft drink there is. The alcohol content of vermouth is low enough to allow me to concentrate on cooking, but it still relaxes me. It’s delicious with ice cream, alone or with tonic. Sometimes I squeeze citrus juice – lemon, orange or grapefruit – or I just let a piece of fruit flow into the glass. If I want it harder, I’ll add gin. And if it’s still not strong enough, I’m just being careless with a classic cocktail.

At home, I don’t bother. Whisky, bitter and sugar are delicious together. I put them in a glass, with ice, and I don’t do anything. It is the laziest of the old habits I know, and I drink it with immense pleasure.
