The first micro-distillery in Paris for over a hundred years, the Distillerie de Paris, founded in the 10th arrondissement by Nicolas Juhlès, claims the French capital as its creative well-spring.
The idea is to capture that fizzing Parisian energy and explore new and remarkable spirits… Obviously he needed a suitable still, and a made-to-measure Holstein was the natural solution. This marvellous creation allows him to produce a dozen different distillates from a single fermentation. First the wort ferments to become a sort of natural beer. During this essential process the yeasts consume the sugar in the malted grains to give alcohol.
