Whirling Dervish Cocktail: a pear-based version of Tequila Sour

Francisco Medici from The Mekan bar at Rüya in London brings this delicious cocktail, the Whirling Dervish a pear-based version of Tequila Sour. Via The Guardian.

For this cocktail you will need a pear puree, either homemade or prepared. If you prepare it, you will need to core the pear and blend it in a processor with sugar syrup until you get a smooth mixture. If you get a thick texture you can add water to lighten it.


Whirling Dervish cocktail


40 ml of Tequila Reposado

30 ml pear purée

25 ml lemon juice

2 fresh sage leaves, plus 2 for garnish

1 pinch of black pepper, and more for garnish

1 egg white

Type of glass

Old fashioned


Add all the ingredients in a cocktail shaker, shake dry to settle the egg white and create a good foam. Add ice to the shaker and shake again. Double filter into Old Fashioned glass with ice, and garnish with sage and pepper.
