After the American Sake Brewery in Virginia, Colorado opened its first sake brewery in Denver: Colorado Sake Co.
In Colorado, Billy Stuart challenged the law to open the Colorado Sake Co. His passion for sake and its brewing, which he learned on his own, led him to found his own sake distillery. Of all the craft breweries (beer, wine, spirits), only those of this spirit had no permit to open.
Stuart commented in an interview with the Business Denver Journal that, in order to do so, he proceeded with the allowed methods and submitted his project to the local senator. Then Governor John Hickenlooper signed in May and it went into effect on August 8.
Colorado Sake Brewery produces fresh, handmade, local, delicious craft sake. The particularity of the brewery is that it serves sake directly from the tap in the same place. You can taste different sake brews:
