“If my first love were a cocktail, it would be a AGUA SANTA”

My first love relates this cocktail: AGUA SANTA

First love reminds me when I was little, my dad used to take us on vacation to my grandfather’s ranch, I remember that my grandfather’s lands were delimited by large lines of pulque agaves (my grandfather always took pulque), I liked it a lot to go with him to “Raspar” they use that term to refer to extracting the pulp from the heart of the agave with a type of long spoon, then they let it rest for a whole night that the maguey cries and accumulates a cloudy color liquid, viscous consistency and sweet flavor, well called: AGUAMIEL, this liquid is left to ferment to obtain the PULQUE, for me I loved this whole method without knowing that one day i would be a Bartender.

 

 

Ingredients

1.5 oz Pox

2 oz Pulque “curado de piñon”

1 oz. Corn liquor

2.5 oz Beetroot Juice

1 oz. Meyer lemon

Method: Shake and Strain on a bule or tecomate jicara, worm salt on rim.

We also get the worms from the leaves of the agaves.
