This liquor is the pride of Dubrovnik and the women and grandmothers who prepare the rozulin, perfect for the spring season and it’s a craft liquor you can easily prepare at home.

Ingredients

A minimum of 12 centifolia roses

1 kg sugar

1 L of eau-de-vie such as Rakija or Grappa

Method

40 days of sunshine

Instruments

Glass jar with lid

Preparation

Start by washing the roses. Dry them well and clean them. Take a handful of rose petals and add them to the jar. Add another handful of sugar and then another handful of roses. Continue until you add all the ingredients creating layers of sugar and roses.

Once the pitcher is jar, add your favorite brandy (grappa or rakija).

Gently mix the contents and close the jar tightly with its lid.

Hold the mixture for 10 days. After 10 days, place the jar on the balcony or terrace and expose it to the sun for 40 days.

Occasionally shake the jar very subtly.

After 40 days filter the liqueur with a cheesecloth.

That’s it! The only thing left to do is to serve the very cold rozulin in a small glass.
