The distillery “Fils du Roy” located at Saint Arsène in Quebec finalized a pastis slightly different from that produced in France. This variant is baptized the Big Ermine, in homage to Jacques Cartier’s boat, a French sailor of the 16th century. Jonathan Roy leaned on techniques of distillation of the French pastis, but by adding it special ingredients. It is the carum caraway, a plant which brings a slightly different taste to the drink.

Other ingredients also enter the composition of “la Grande Hermine”. It contains fennel, agastache, green anise, star anise, some vanilla and the licorice. This formulation is in accordance with the will which has Jonathan Roy to produce some 100% natural pastis. The pastis is besides presented to “Fêtes de la Nouvelle-France“ for all the lovers of vine.
