The focus is put at first on herbs and aromatic plants as basil, parsley and thyme which give some taste to cocktails. Cultivated in Asia and the Middle East, this spice has well-known culinary virtues. Sergio also talks about Shrubs, a fruit liqueur that was already popular in the 17th and 18th century in England. The preparation is typically made with rum or brandy mixed with sugar, juice or rinds of citrus fruit.
