Calibre Ocho cocktail by Ralph Allen Santos
Ocho (eight) stands for Santo’s 8th year in the bar industry and calibre means dimension. Ralph Allen Santos gave birth to the pleasant aroma of Calibre Ocho made with anise and orange oil during his lowest point as a bartender. This is why this cocktail represents for Santos, the dimension of his thoughts when hitting bottom.
Calibre Ocho Cocktail
Ingredients:
500 ml of water
45 ml Bacardi Ocho
5 ml Sherry Amontillado
5 ml Fennel and Orange syrup
2 dashes Chocolate Bitters
Burnt anise and orange peel
500grams white sugar
20grams fennel seeds
Orange peel (one whole orange)
Type of glass: Old-fashioned or rocks glass
Garnish: Burnt anise and orange peel
Preparation:
First, you must prepare the orange peel syrup in advance. Boil 500ml of water, add 500grms of sugar and the 20grms of fennel, put orange peel, stir and marry all the ingredients for 2 hours in an airlock container. Continue stirring until the sugar is dissolved and let it cool. Finally use a strainer to remove all the seeds and the peel.
To create the drink, add the 45 ml Bacardi Ocho, 7.5 ml Sherry Amontillado, 7.5 ml Fennel and Orange syrup, 2 dashes Chocolate Bitters together, stir and pour in a rocks glass. Garnish your drink with burnt anise and orange peel.
