The XO Cocktail, is Erwan Le Bonniec’s Kester Thomas twist on the cognac based sidecar cocktail. “As our first recommendation on the menu, the XO became our go to cocktail satisfying Kester Thomas walk-ins as much as regular loyal guests,” says the bar.

Ingredients
30ml VSOP Cognac
15ml Italicus Rosolio di Bergamotto
20ml Lemon Juice
10ml Maple Syrup
Top up with champagne
