Great spirited Chocolates from Danemark

From the Friis-Holm Chocolate and the Hammer & Son Distillery 

Did you know Denmark is the Country of Honor for this year’s Bar Convent Berlin ?

In light of this we would love to share with you some of our favorite memories from our trip earlier this year to Denmark !

Friis-Holm Chocolate  was founded by Mikkel Friis-Holm, on a positive connection between quality and ethics, working in close relation to cacao growers and seeking the clear proportional connection between production conditions and the quality of the beans.

Spirits Hunters went to visit the Friis-Holm chocolate factory where we had much fun to see how passionate Friis-Holm is about making the best chocolate.

We had the honor to meet Mikkel Friis-Holm, founder of the chocolate factory. Since 2003 he has been working in close reaction with cacao farmers, seeking the clear proportional connection between production conditions and the quality of the beans.

The quality of the raw cacao fruit is essential for the overall expression of good chocolate. We deal with our cacao growers directly at prices that leave a good taste in the mouth, and are deeply involved in the fermentation and handling of the raw cacao to achieve the maximum depth, complexity and intensity in the final product.

We also had the pleasure to meet Cendie Themsen, who is chief chocolatier and expert in filled chocolates, where we got to learn about their tips and recipes for their very special box of spirits filled chocolates :

  • 8 pieces of chocolate filled with Sloe gin from their good friend and neighbor Henrik Hammer who has Vintre Møller destilleri – Hammer&Son.
  • Rum piece made with Skotlander Jamaica High Ester rum (Monymusk and New Yarmouth).
  • Whisky piece made with Stauning Kaos whisky made with an Absinthe produced by Hammer&Son which will be available soon to the public, so keep an eye out for that !

It was very interesting to learn about the passion of chocolate making that is held at Friis-Holm, as well as their involvement in the ethical side of their amazing creations.

Our favorite part?  Tasting these extremely good chocolates made with love and the perfect ingredients (shoutout to our new favorite absinthe-filled chocolate)
