The country’s warm climate and nutrient-rich soil are ideal for growing blue agave. Indeed, the state of the soil is important to determine the taste of tequila. In fact, tequila created in the highlands has a sweeter, floral and fruitier taste than tequila from the lowlands.
About 80% of blue agave grows in Jalisco, Mexico’s main tequila producing region. Mexican legislation also allows certain states such as Tamaulipas, Nayarit, Michoacan and Guanajuato to produce tequilas. Tequila holds the “denomination of origin” status, which means the spirit is only “tequila” if it is produced and bottled in the specific areas of Mexico mentioned above.
All quality tequila is labelled as 100% blue agave. But only when it is made from the juice of the blue agave plant. The latter needs eight years to mature. As a result, the manufacture of the top 10 best-selling tequilas in Mexico requires great care and patience. Once mature, their piñas (the heart of the agave that has the sweetest juices and looks like giant pineapples) are cooked. Steamed, crushed and fermented in tequila. Tequila is legally required to contain only 51% blue agave. There are four variants of this spirit:
- Blanco (silver or unaged),
- Reposado (rested),
- Añejo (aged),
- Extra Anejo (ultra aged), depending on their ageing time.
