We continue with our new Cocktail Anecdote section, with Julien Escot (Aperture Montpellier). This edition we discover the Tokyo Society.
Inspiration Cocktail
Escot is inspired by the Japanese community that frequent cocktail bars and hotels in Tokyo City to name this vodka-based cocktail. A cocktail that is both sagacious and subtle, reminiscent of the Asian country and with more exotic flavours. Partly thanks to yuzu and partly thanks to vanilla.

“This cocktail is part of a trilogy I created on the theme of Asia. I didn’t push the Japanese side to the limit, I worked more around the Yuzu-Vanille association, which works really well. The name evokes the idea of an urban community of people who frequent hotel and cocktail bars in the city of Tokyo.”
Tokyo Society Cocktail Recipe
40 ml vodka
15 ml yuzu liqueur
20 ml fresh lemon juice
15 ml sugar syrup
3 drops of vanilla bitters
10 ml egg white
Garnish
Sichuan pepper
Preparation
Pour the ingredients into a shaker filled with ice cubes. Shake vigorously, then filter over the serving glass. Garnish, and do not hesitate to taste it as soon as possible.
