Signature dishes include Philippine’s entry-winning Cuisse Dauphine with poultry jus and smoked mayo; smoked oyster mushroom skewers with mushroom jus and powder; aged and brined fish sashimi with furikake; and a frozen vacherin with herbs, elevated by a vinegar-infused cream.
