“My Best and Favorite Gin”, by Mario Farulla

Mario Farulla was born and raised in Rome. Bartender since he was 19 years old, today he shares with us his know-how and his favourite gins, which he uses in his cocktails.

I left Italy at the age of 19 to travel the world and work in England, Azerbaijan and the Middle East. I gained my experience working in five-star hotels and bars, such as the Four Seasons, the Marriot Group and the Galvin Brothers (a group of Michelin-starred restaurants),” he says.

Eventually he returned to his hometown and became the manager of the bar at Baccano, a restaurant in the Trevi district. With its extremely refined retro touch, it offers authentic Mediterranean flavours. “I am very proud because we just won the 3rd best cocktail bar in Italy. Even though we are a high-volume bar, we maintain a classic service and I try to incorporate my personal touch by mixing Calvados and Cognacs with classic Italian cocktails,” says Mario.

His best signature cocktail is vermouth based: “I’m Italian so I love vermouth and I’m working more and more with white vermouth. My favourite cocktail is a dry Martini served in a very cold glass” he concludes, before adding “For me, a good cocktail can be complicated or easy, as long as it is the right drink for the customer“.

Botanicals – juniper, coriander seed, lemon peel, bitter orange peel, grapefruit peel, angelica, cassia, jasmine and orris.

Dry juniper leads, then reveals lemon tart & orange marmalade, before all the flavours harmonies.

Tanqueray

Balanced & dry, with juniper, coriander & liqourice.
