José Luis Valencia bartender, formerly head bartender at Hotel B, a summer pavilion built in the Belle Époque, in the heart of the Barranco district, a historic area of Peru, on the edge of the Pacific Ocean, is now Shaking’s manager. Lima’s first beer bar, called the Nuevo Mundo Draft Bar, also called upon the talent of the famous bartender José Luis Valencia to create this list of beer cocktails. This bar is the temple of artisanal beers and it had to perfectly meet the needs of customers and tourists. “I designed the drinks as derivatives of classic cocktails so that the list would be attractive to cocktail connoisseurs and novices alike,” explains José Luis.

Jose Luis Valencia’s tequilas
Milagros: an intense aroma of cooked celery emerges on the nose. The palate, although initially oily and fluid, ends on a fresh and mentholated note. The following flavors bring out tropical fruits, but with a slight base note.
Herradura: This slightly golden tequila offers classic aromas of agave, vanilla and caramel. It also has a slight alcohol-burning taste with hints of orange peel and cedar. On the palate, this is a pleasantly medium-bodied tequila. Herradura lightly coats the tongue and has a mixture of spicy, oak and light agave notes. In addition, notes of vanilla and a slight earthy flavor. The finish is light, with more flavors of cooking spices and vanilla. Very pleasant agave finish.
Don Julio: The nose is bright and insolent, with aromas of fresh agave reinforced by a little lemon and grapefruit. A little smoky taste accompanies the pear and citrus peel in the mouth. The flavors linger in the finish with a return of agave and a little pepper.
