An Irish Cream Iced Coffee with Matcha and Ube Cold Foam
You should definitely try the Matcha Coffee Cocktail. This is an inspirational cocktail. You can choose to add pistachio cream, or other, but remember to layer the heaviest ingredients in first. Choose to add pistachio mousse or others but remember you layer the heaviest ingredient in the glass first.
Matcha, a Japanese green tea powder rich in antioxidants and L-theanine, is a standout ingredient in 2025. It is widely used in beverages (lattes, smoothies) as well as in dishes and desserts (ice cream, mochi, madeleines). Its vibrant color and energizing properties make it a must-have addition.
Ube is made from cooked, mashed, dehydrated, and ground ube, ube powder (also known as purple yam powder) must be cooked with water to reconstitute it into a paste, which can then be mixed into smoothies, added to white hot chocolate, incorporated into ice cream, or added to bread or pasta doughs to add color and a subtle.
Matcha coffee cocktail Layered Beverage
Think of this as a layered drink, similar to a layer cake. You can choose what to include, but the key rule is to layer the heaviest ingredients first.
- Coffee liqueur at the bottom
- Creamy coffee layer, like Bailey’s
- Matcha cream
- Ube foam for a purple touch
- Very light whipped cream on top, sprinkled with matcha and ube
Matcha Cold Foam Recipe
Another version for our famous Matcha Coffee Cocktail. A dairy-free version of Starbucks’ Matcha Cold Foam—sweet, creamy, and perfect on top of matcha, coffee, or chai!

Cook Time: 3 minutes
Total Time: 5 minutes
Servings: 1
Ingredients:
- 1/4 cup plant-based cream (or heavy cream if not dairy-free)
- 2 tsp maple syrup
- 1 tsp vanilla extract
- 1 tsp ceremonial-grade matcha powder
Instructions:
- Add all ingredients to a bowl or deep dish and whisk with an electric mixer until fully combined.
- Pour over your favorite beverage and enjoy!
Ube Cold Foam Recipe
A rich, vibrant purple foam with a sweet, nutty flavor.
Ingredients:
- 1/4 cup heavy whipping cream
- 1/2 cup half-and-half
- 1 tbsp ube simple syrup
- 1/2 tsp ube extract
Instructions:
In an airtight container or mason jar, add the cream, half-and-half, ube simple syrup, and ube extract.
Close the lid and shake until the foam thickens (about 1-2 minutes).
Prepare a tall glass with ice and your favorite cold brew or iced coffee.
For toppings, you can sprinkle ube or matcha powder, or add a few sugared coffee beans.
You can drink layer by layer or mix it all up for a It’s a version of Irish coffee with a tang and soft acidity, bringing an umami depth. Not too sweet, not too tart.
