Innovations: a sustainable gin made from wine

Imbibis Craft Distillery, from Australia, created a wine based gin. The typically artisan distillery creates the gin of the same name Imbibis in the style of “Modern Australian Gin”.

The gin is created by the distiller who has an expert past producing wine. So, logically, it became inevitable to use spirit-based wine to create Imbibis. And for yet other reasons: the wine based spirit has a very peculiar texture and mouthfeel that is unlike any other.

In addition, the distillery focuses on using the best quality ingredients to produce a quality gin. Indeed, the ingredients are native, wild fodder and of international origin of the highest quality.

“The use of certified organic botanicals of sustainable origin is fundamental to our spirit. Accordingly, we have sought out Southeast Queensland for the unique indigenous ingredients that make our gin like no other.”

Ingredients that complement this gin include: juniper, coriander seed, lemon peel, orange peel, cinnamon, cassia bark, angelica root, turmeric, lavender flower, orris root, star anise, cloves, galangal, lemon myrtle and calyston flower.

Tasting notes

Nose: recognizable as gin by the influence of juniper.

Taste: rich and generous led by the juniper and citrus. Notes of lavender, caliston and galangal. Freshness on the mid-palate thanks to lemon myrtle, and a long, spicy finish thanks to notes of cinnamon, turmeric, nutmeg, cloves and star anise.

The Imbibis distillery produces disinfectant hand rub

It should be noted that during the global covid-19 coronavirus pandemic, the Imbibis distillery is producing 1L lots of alcohol disinfectant / hand rub (not gel type) with cap. Made from the WHO recommended formula and distilled at home. Its formula is 80% alcohol/vol and kills 99.99% of germs. This product is for collection at the distillery only.

They also created 500ml alcohol disinfectant / hand rub in limited quantities of 200 bottles.
